This presentation explores factors that contribute to the gap between hospitality consumers’ beliefs toward sustainability efforts and
their actual behaviors by evaluating the interactions between knowledge, credibility, and trust and their impacts on behavioral intentions. This presentation also examines the effects of message framing and information presentation
on guests' support for sustainability efforts.

This presentation will focus on the changing landscape of the food service industry and discuss options of how we, as operators, can adjust our approach to not just survive but thrive in these challenging times. We will discuss the guest experience and how the current labor market and technology are influencing what these experiences look like. Furthermore, we will cover trends in all aspects of the dining
experience so that we are making informed decisions to engage, or not engage, in these trends. Come join the conversation where we will cover the good, the bad, and the ugly, all while smiling😊

Jim Harbour (’99) is a culinary and beverage educator who began teaching within the WSU School of Hospitality Business Management in 2006. He is a strong advocate for developing students through real-life and international experiences. He participates in the Carson College of Business faculty-led study abroad programs and guides his students in business plan development and study abroad. In addition, he serves as International Business Institute Fellow for the Carson College, and he’s a member of the Washington Restaurant Association and the Downtown Pullman Marketing Group. His professional interests focus on operations, and he owns several restaurants and a catering operation in Pullman, Washington. Harbour earned a bachelor’s in hotel restaurant administration from WSU and an MBA from Gonzaga University.
